Vanilla Crunch Breakfast Parfait
ingredients
- 3 ounce small curd, low–fat cottage cheese
- 3 ounce non–fat light vanilla yogurt
- 4 teaspoons pecans, chopped
- 2 tablespoons low–fat granola cereal
- 2 strawberries, sliced
- 1 kiwi, peeled and sliced
- 1 tablespoon fresh blueberries
preparation
- Combine cottage cheese and yogurt in a food processor or blender and process until smooth. Pulse to get desired consistency.
- Spoon 1 tablespoon of yogurt mixture into the bottom of the glass.
- Top the yogurt with 2 teaspoons pecans and 1 tablespoon granola.
- Layer half of the strawberries, kiwi, and blueberries over the granola and pecans.
- Repeat this process once more starting with the yogurt mixture.
Substitutions:
Use any fresh fruit in season, or any frozen fruit.
